Yes, probablly you're right. Since the main address is 
bob.marley at example.com it wil try deliver to that domain.
Can you try fallback_transport_maps instead transport maps?
If example.com is the only domain on the kolab server you can also 
try some tweak in ldap query ( 
/etc/postfix/ldap/local_recipient_maps.cf )  to persuade it to deliver to 
mail.example.com but i can't say exactly how.
