Playing around in the LDAP-Tree does not really sound like the best
solution in that case as some of the structures are important for the
applications dependant on the LDAP tree. In the worst case your mail
system suddenly doesn't work anymore.

If Outlook has no LDAP filtering capabilities I'd suggest to maybe use
an LDAP-Proxy or something like that.

A friend of mine recently used metadirectory

Seemed quite capable of dealing with many LDAP conversions.
