To answer the second question, it's Postfix/Roundcube but you can use 
dovecot if you wish to - requires more of your time to config.

By migrate from Bluehost to Kolab (self-hosted) I presume you mean 
export your data, have you checked with Bluehost to see if that's a 
service they even provide? A lot of hosting providers do not make it 
easy to export-out of their system. If you have a domain and DNS, then 
self-hosted Kolab is more than poss.
