Change recipient delimiter

I want to change the recipient delimiter from a "+" to "-". This should 
be as simple as changing recipient_delimiter in /etc/postfix/main.cf 
from "recipient_delimiter = +" to "recipient_delimiter = -". If I do 
this it breaks both + and - delimiters, ie. user-test at domain.com fails 
as does user+test at domain.com. If I change it back to "+" then 
user+test at domain.com works again.

Any pointers? I have tried changing recipient_delimiter in amavisd.conf 
and that doesn't seem to work either.
