You will want to (at least) back up your IMAP mail spool, MySQL and LDAP. It
is suggested /var/lib/imap/, /var/spool/imap/ and /var/lib/mysql/ are located
on a LVM logical volume with sufficient space in the volume group to take
snapshots[1,2], and we provide a script to export LDAP[3].
