Unless something has changed, this is not entirely accurate; the setting
makes it possible to edit the mail field, but it will get overridden in
the backend with the value generated from the primary_mail attribute. I
forget whether the same is true for the uid field.

There's a bug report with a patch to add an option to disable that
behaviour here: https://issues.kolab.org/show_bug.cgi?id=2325 :)
