The Fix was easy and the problem rather stupid.

Somehow and I am 99% sure I didn't change it myself the global 
addressbook became the default calendar. With the global addressbook the 
default calendar of course horde tried to add the user to the ldap 
(which still should have worked since my user has administrator rights, 
right?). However changing the default addressbook back to contact fixed 
everything and all contacts are "back".
