At least when using the standard protocols like IMAP you can access
the Exchange server additionally. I doubt that you can run full exchange mode,
because Outlook will delay some funcationality to exchange and not to it
locally anymore.

What we often do in such a setting is what I call an email split,
see

So invitation emails will work fine between all them.
