/kolab/sbin/passwd is your friend :-)

The procedure is also documented in doc/architecture/server.sgml 
(<http://kolab.org/cgi-bin/viewcvs-kolab.cgi/doc/architecture/server.sgml>). 
Unfortunately, this document doesn't get installed on the Kolab server.
