Yes Kolab 1 is stable (does not change)

We at erfrakon depend entirely on Kolab 2. If you have a version which works 
it typically remains fairly stable. 

Please be careful when upgrading a "production" Kolab 2 environment to newer 
versions as there might potentially be incompatible updates.

Yes, all Kolab 1 clients can still be used with Kolab 2. 

The currently best tested Kolab 2 Clients are KDE Kontact (Proko2 branch) and 
an internal (not published IIRC) version of the Toltec Connector.

Task management (ToDos) should work.
