Such kind of meta-packages are certainly one way of getting there. It  
could get complicated though once you have variability in more than  
one package (e.g. you may choose between Cyrus/Dovecot besides the  
LDAP server).

I still consider this to be the job of configuration management with  
the different options being represented as modules (kolab-ldap,  
kolab-imap). This might also allow automatic separation of these  
modules onto different servers. Which is a situation where package  
management will fail anyhow and configuration management is your only  
available solution.
