First you need to seperate where the infection of data happens.
This can be done, as you were saying, by doing periodical backups
and comparing them to get a timeline.
If you want to reduce data in the backups, you can try to use checksums
for parts of the data, e.g. single files.
With the timeline you can check the logs of the server and the client.
You should use a full debugging build which will get you a lot of
output on the console for Kontact.
The server also has debugging where you can see when a client logged
in and what emails got written and so on.
