I'm sure no mail will be lost, either it will be queued or bounced.
I haven't tested it, but I guess it will be queued for
maximal_queue_lifetime (default is 5 days) until it will get
bounced.

There are more things:
/etc/crontab:
monthly/weekly/hourly/quarterly tasks
/etc/openpkg:
just contains "/kolab"
and the SysV init script links /etc/rc?.d/???kolab, or whatever
system and location will be used on that machine. OpenPKG should
know.
