Hi,
enable debugging of kolabd and wallaced.
Also, there are pretty much debug switches in the roundcube config.
E.g:
//$config['debug_level'] = 0;
$config['activesync_debug'] = true;
$config['sql_debug'] = false;
$config['imap_debug'] = false;
$config['ldap_debug'] = false;
$config['smtp_debug'] = false;

Enable all, to get reasonable output in
/var/log/roundcubemail/[sql|imap|errors] etc.

Defaults for kolab-server: /etc/default/kolab-server:
FLAGS="-l debug -d 9"

Wallace:
FLAGS="-l debug -d 9"

Check the file /var/log/kolab/pykolab then.

Check the debug switch in imapd.conf:
Also, i prefer to log to a local facility. (rsyslog.conf)

local6.*    /var/log/imapd.log

imapd.conf:
syslog_prefix: cyrus-imapd
syslog_facility: LOCAL6
debug: 1

Consult the manpages for more help.

Rgds.

Franz
