This is our info under version in the webadmin
Any pointers on how to keep the system up to date would be nice
This is a production server so I can't afford to have a lot of downtime

Depends on your definition of "kolab".
For the KDE Kolab Client, apt-get is the recommended way, if you get the packages from the Kolab Konsortium or your upstream distribution.

For Kolab Server the recommended way is to use Kolab Server/OpenPKG and updates from from OpenPKG or the Kolab developers.
You do not use apt-get for those.

The Kolab Server/Debian variant is under development. You should use it with apt-get if you like to help testing it!
