Use Kolab-Server-2.1.0. It is the currently stable version. Everything
labeled 2.2 must still be in beta since we are still working on that
version.

You mentioned binaries in the Debian tree. I assume these are from the
Kolab2/Debian project (http://pkg-kolab.alioth.debian.org/). The
differences between the Kolab2/OpenPKG server and native ports such as
Kolab2/Debian, Kolab2/Suse or Kolab2/Gentoo are detailed here:

Since the OpenPKG environment is a well defined set of packages you
can always rely on this server being the most tested and most stable
one.

Yes. As long as you don't use a single port on the same IP twice ;)
you should be fine and both environments won't disturb each other.
